Tahini Skewers
Enjoy Mediterranean flavors packed into the chicken and vegetables
Ingredients
- 2-3 lb Skinless chicken thighs, thick sliced
- 3 tbsp Garlic, minced
- ¼ cup or 2 Lemons, juice
- 1 Lemon, zest
- ¼ cup Tahini
- ¼ tsp Salt
- 1 tsp Onion powder
- 1 tsp Garlic powder
- 2 tsp Paprika
- 2 tbsp Olive oil
- 1 tbsp Cilantro, chop
- 1 tsp Honey
- 2 Bell pepper, diced
- 1 Onion, diced
- ½ lb Asparagus, diced
- ½ lb Button mushrooms, halved
- ½ lb Broccoli or cauliflower florets
- 1 lb Zucchini, sliced
- 1 cup Cherry tomatoes
Directions
Heat grill or broiler to 350F.
In a large bowl, mix all ingredients, except chicken and vegetables.
Then, add chicken and toss in marinade. Let marinate for at least 30 minutes or overnight in fridge.
Layer chicken and vegetables on skewer, starting at a thumb length from the bottom.
Place skewers on grill and cook each side 7 minutes or more, until meat is cooked through.
