Snowball Cookies (Sandies)
Ingredients
- 1 cup Nut of choice (pecans, almonds, walnuts, or hazelnuts), finely chopped
- 1 cup Butter
- 1/2 cup Confectioner's sugar
- 1/4 teaspoon Salt
- 1 tablespoon Vanilla extract
- 2 cups Flour, sifted
- 1 cup Confectioner's sugar for dusting and coating
Directions
Preheat oven at 325°F. Lightly toast nuts on a small baking sheet for about 5 - 8 minutes. Set aside for later.
Cream butter and sugar together in a mixing bowl.
Add salt and vanilla extract to mixture and mix until light and fluffy.
Combine flour and nuts into mixture and blend until mixture is almost a crumby consistency.
Shape mixture into 1” balls and place onto an ungreased or wax paper covered baking sheet.
Bake at 325°F for about 10 - 15 minutes or until light golden brown.
Remove from oven and dust cookies with sugar while they are still hot on the baking sheet. Let cool.
In a small bowl, coat cookies in remaining sugar after they have cooled. Enjoy!
