Scallop Potatoes
Ingredients
- 2 Potatoes, large
- 4 oz. Velveeta cheese block, cubed
- 2 cans Cream of Chicken
- 1/2 stick Butter
- 4 oz. Sour cream
Directions
Preheat oven to 350°F.
Boil potatoes until cooked but still firm. Cool & peel.
Slice in 1/4 inch thick rounds and layer in a small baking dish.
Combine cheese, Cream of Chicken, butter and sour cream in a medium pot over medium heat. Constantly stir until all is melted and sauce-like.
Pour mixture over sliced potatoes and bake uncovered for about 40-45 minutes until the top starts to bubble and slightly brown.
