Ingredients
- 1 (12 oz) package Green Giant® Riced Cauliflower, cooked according to package and cooled
- 10 oz Frozen corn, cooked according to package and cooled
- 1 cup Grape tomatoes, quartered
- 1 medium Zucchini, chopped
- 1/4 cup Red onion, chopped
- 1/4 cup Fresh basil, chopped
- 2 cloves Garlic, chopped
- 2 tbsp Extra virgin olive oil
- 2 tbsp Balsamic vinegar
Directions
Combine Riced Cauliflower, corn, tomatoes, zucchini and red onion in a large bowl.
Add remaining ingredients, and mix well.
Season to taste with black pepper.
Serve immediately, or store in the refrigerator. Garnish with basil and grated Parmesan cheese, if desired.
