- Pesto: 2 cups spinach; 1 cup basil; 1 tbsp garlic, minced; 3 tbsp parmesan cheese; ½ - ¾ cup olive oil; Pepper to taste
Directions
In a blender or food processor, combine all pesto ingredients except olive oil. Blend on low, slowly add ½ cup of oil. For a thinner consistency, add oil as needed. Set aside.
Place crust on a sheet pan lined with foil. Spread the pesto on the crust.
Top with cheese and vegetables.
Drizzle with oil and bake for 15-20 minutes, or until the crust is browned.
