Baked Mahi fish sticks
Ingredients
- 2 lb Mahi, cut into 1 inch sticks
- 1 cup Panko bread crumbs
- 1 tbsp each: Garlic powder, onion powder, ground ginger, dried parsley,
- 1 tsp Black pepper,
- 2 Calamansi, zested
- Pinch of salt
- 2 Eggs, beaten
- 1 cup Whole grain flour
- ½ cup Avocado oil

- Tartar Sauce: 1 cup Plain greek yogurt; 1 tbsp Capers, chopped; 1 tbsp Pickles, chopped; 1 clove Garlic, mince; 1 tbsp Red onion, diced; ½ tsp each: Garlic powder, onion powder, black pepper; ¼ tsp Paprika
Directions
Preheat oven to 400°F. Pat the mahi dry with a paper towel.
Add seasonings and calamansi zest to flour and mix. Coat the mahi evenly.
Beat eggs in a large bowl. working in batches dredge mahi in eggs then coat with panko.
Place mahi on oiled sheet pan lined with foil. Drizzle remaining avocado oil on top.
Bake in oven for 10 to 15 minutes. Flip sticks after 7 minutes to cook on other side.
Tartar sauce: add all ingredients to a bowl and mix.
