Gluten-free Gingerbread Cookies
Ingredients
- 1 ¼ cup Almond meal
- 1 cup Oat flour
- ½ cup Coconut sugar
- 1 tbsp Ground ginger
- 2 tsp Cinnamon
- 1 tsp Allspice
- 1 ½ tsp Baking powder
- ¼ cup Molasses
- ⅓ cup Coconut oil, melted
- 2 tsp Vanilla extract
- Icing
Directions
Preheat oven to 350 F.
In a bowl, mix dry ingredients. In a separate bowl, mix molasses, coconut oil, and vanilla extract.
While mixing slowly, add dry ingredients to wet mixture to form a dark, sticky dough. Shape into a ball.
Take ⅓ of dough and roll between two pieces of parchment in a sheet pan. Roll to ⅛ inch thick.
Dust cookie cutter with flour and press out gingerbread men.
Remove excess dough and combine with remaining dough. Repeat process until dough is finished.
Bake for 10-12 minutes. Let cool for 3-5 minutes before icing.
